gawd, you DO make it all seem so easy. listing cheese cloth as part of the recipe might save us knaves from having to make two trips to the store...those of us who don't read ahead, ya know?

Thank you, Pamela! I saw your blog swap post on these ricotta fritters and thought they looked great, so I had to prevail on Husbear to make them. Thank you for the idea!


Since you listed buttermilk as one of the ingredients, what do the Italians make it with since I'm having a horrible time finding buttermilk in Firenze? So far I've found cottage cheese (3.62 euro for 20cL), quasi sour cream (crem de crem) which is somewhere between sour cream and cream cheese, but no buttermilk. I guess I could drive to a dairy farm and ask them for theirs.


Yeah, Chris... this is exactly the reason Logan didn't make ricotta the whole time we were in Italy. Apparently, you can add a little vinegar or lemon to the milk to help it curdle, but that will affect the flavor of the finished cheese. I would mail you some, but somehow I don't think it would arrive all that tasty?
